Truffle Skillet Nachos

INGREDIENTS:

  • 1 wheel Truffleist Truffle Kunik, cubed
  • 1⁄2 lb cheddar cheese, shredded
  • 1 bag tortilla chips
  • 1⁄2 lb roasted brussels sprouts
  • 1⁄4 cup dried cranberries
  • Extra roasted veggies (optional)

DIRECTIONS:

  1. Clean and halve brussels sprouts
  2. Place on baking sheet
  3. Drizzle with olive oil and salt
  4. Roast for 20 minutes
  5. Layer tortilla chips on bottom of a cast iron skillet
  6. Top with roasted brussels
  7. Add additional roasted vegetables as desired (we love butternut squash)
  8. Sprinkle with cheddar cheese
  9. Layer cubed Truffleist Truffle Kunik over cheddar
  10. Place in 400 degree oven for 5 - 10 minutes or until cheese is melted
  11. Remove from oven and sprinkle cranberries over top immediately
  12. Let stand 2 - 5 minutes before serving
  13. Enjoy!
