2 c cherry tomatoes
1 Tbs The Truffleist Truffle Oil
1 Tbs chopped herbs of your choice
1 tsp kosher salt
½ tsp freshly ground black pepper
Preheat oven to 425F.
Toss all ingredients in a mixing bowl, then transfer to a baking sheet lined with parchment.
Place in the oven, and roast for about 15-20 minutes, until skins burst and and starting to turn golden.
Remove from the oven, and serve warm, or chill to serve cold.
